Manually and very carefully harvested in plastic crates, the grapes affected by noble Botrytis Cinerea were de-stemmed without crushing, and then the whole grapes were pressed, the resulting must was seeded with selected yeasts and fermented for a while in small-sized vats with automatically controlled temperature of approximately 17 ºC, then the fermentation was finished in French oak barriques. After the completion of alcoholic fermentation, the wine was refined for 24 months in French oak barriques of varying toasting (baking) degrees.
Appearance: the wine is clear bright with a golden yellow color, possible sediments normal since the wine was not filtered. Nose: intense with a flowery bouquet mixed with dry fruit aromas, tints of caramel, honey and linden flowers. Palate: It is full and savory, oily, with a complex body and texture which make it long and pleasant.
SERVING SUGGESTIONS: It may be served alongside foie gras, desserts or strong-flavored cheese, at a temperature of 10-12 ºC.
AGING POTENTIAL: it can be aged in bottles for a long period of time without having its qualities altered, the wine becoming more complex, noble and generous.
