Manual harvesting. After crushing and de-stemming follows by the cooling of the must and its maintenance without straining for 2-4 hours for a better extraction of the primary aromas in the peel, continued with the clarifying of the must and seeding with selected yeasts in automatically-controlled low temperature conditions (approximately 17 ºC).


Appearance: clear bright of a light yellow color with greenish reflexes. Nose: intense and persistent with wild flower accents of jasmine and elder, slightly mineral, with a fruity aroma of green apple. Palate: dry, well contoured acidity, powerful, pleasant attack, followed by a fine finish and a prolonged aftertaste.

SERVING SUGGESTIONS: the optimum serving temperature is 10-12 ºC. One may serve it with white meat dishes, seafood or light cheeses.

AGING POTENTIAL: one may drink it fresh or slightly aged (1-2 years), the latter giving it a complex bouquet.
