RESIDUAL SUGARS: 4-5 g/lt.
Manual harvesting in plastic crates. After destemming and crushing, the must cooled then strained in membrane grape crushers, at low pressures. The fermentation is separate for each variety and it takes place in stainless steel vats at an automatically-controlled low temperature (approximately 17 ºC).
Appearance: clear bright with an intense pink color and copper reflexes. Nose: profound, intense, aromas of well-mellowed forest fruit, strawberries, cherries, traces of spices. Palate: dry, full, savory, slightly acid, with intense finish and aftertaste.
SERVING SUGGESTIONS: the optimum serving temperature is 12 ºC. One may serve it with seafood, salmon, red tuna, large crustaceans, fresh cold cuts.
AGING POTENTIAL: one may drink it fresh or slightly aged (1-2 years), the latter giving it a complex bouquet.
