The grapes are harvested by hand and also sorted by hand in the winery. Following the destemming, the must is pumped in stainless vats equipped with automatic temperature regulators. The addition of yeasts completes the alcoholic fermentation. The wine is then transfered to French oak barriques, where the malolactic fermentation takes place. An ageing period finishes the process in 6 to 9 months.
Appearance: clear, shining ruby red with purple shades. Nose: intense, exhibiting forest fruits aromas (blueberries and cranberries), black pepper nuances. Palate: dry, full, ballanced, complex, presenting mature tannins, slightly astringent, with a long-lasting aftertaste.
SERVING SUGGESTIONS: the optimal temperature for consumption is 18°C. Pairs well with red meat dishes, medium-sized venison, traditional Romanian meat dishes, fine cheeses.
AGING POTENTIAL: the wine can be bottle-aged for 4-6 years in cellar conditions, thus achieving a velvety structure and a more complex bouquet.
