CASTEL BOLOVANU Cabernet Sauvignon

DENOMINATION OF ORIGIN: DOC-CMD Sâmbureşti- Bolovanu; ROMANIA

PRODUCER: the wine is produced at Bolovanu Winery- Vinarte and aged in oak barrels for at least 6 months.

CLIMATE: temperate-continental of a Cfbx (Köppen) subtype.

SOIL: brown, brown luvic, calcareous regosol, calcic preluvosol, alluvial gravels.

VARIETY: Cabernet Sauvignon 100%

ALCOHOL CONTENT: 14.00% vol.

VINIFICATION: the grapes are harvested by hand in plastic crates and afterwards they are manually sorted in the winery. Next come the de-stemming and the crushing, the must being pumped into automatically controlled temperature stainless steel tanks. Yeast seeding leads to the completion of the alcoholic fermentation. Next come the racking of the wine into French barrels, the completion of the malolactic fermentation and the refinement through a 6-9 month maturing period.

TASTING NOTES: Visually: clear, bright, intense ruby ​​red color, with purple highlights. Olfactory: intense, with aromas of forest fruits (currants, blueberries) and notes of black pepper. Gustative: dry, full-bodied, well-balanced, round tannins, slightly astringent and a long, lingering finish.

GASTRONOMIC ASSOCIATIONS: the optimum drinking temperature is of 18º C. One may serve it with red meat dishes, medium-sized venison, traditional Romanian meat-based dishes, fine cheeses.

AGING POTENTIAL: the wine may be aged in bottles (4-6 years) in cellar conditions, thus acquiring a velvety texture and a complex bouquet.
