CASTEL STARMINA Negru de Dragasani

DENOMINATION OF ORIGIN: DOC-CMD Mehedinţi; ROMANIA

CELLAR: The wine is produced and bottled at Stârmina - Vinarte Winery.

CLIMATE: Temperate-Continental with Mediterranean influences.

SOIL: Argillaceous-illuvial with rubble, sand and marls sediments.

VARIETY: Negru de Drăgăşani 95%, Novac 5%

ALCOHOL CONTENT: 13,50% vol. 

VINIFICATION: Manually harvested in plastic crates, de-stemming and crushing, the must is pumped into temperature-controlled stainless steel cisterns where it is seeded with yeasts to complete the alcoholic fermentation, followed by the racking of the wine and the finalization of the malolactic fermentation in French barriques where it is refined by a maturing period of approximately 6 months.
 
TASTING NOTES: Appearance: clear, intense ruby-red, bright with violet reflexes Nose: intense, black cherry and forest fruit aromas, traces of spices. Palate: full, strong and balanced, with round tannins, with fruity notes and a persistent finish. 

SERVING SUGGESTIONS:  The optimum drinking temperature is of 15 ºC. It may be served with cold cuts, read meat dishes, small venison, traditional meat based Romanian dishes or fresh cheeses.

AGING POTENTIAL: The wine may be aged in bottles (3-4 years) thus acquiring a more velvety structure and a more complex bouquet.
